Gilles De Clerck is the founder of Attimo Olive Oils, a Belgian company dedicated to discovering and sharing some of Europe's finest extra virgin olive oils. With a background in marketing, strategy and technology, Gilles spent years in the fast-paced startup world before feeling drawn back to a slower, more intentional way of living.
Inspired by countless childhood summers in the Italian countryside, he developed a deep appreciation for the traditions, craftsmanship and beauty behind exceptional olive oil. Today, he travels across Southern Europe in search of small-scale producers who harvest early, work with respect for nature and create olive oils that combine remarkable flavour with outstanding nutritional quality.
Driven by a passion for longevity, natural health and authenticity, Gilles believes that understanding where our food comes from is just as important as understanding what it contains.
